Modern Vegetarian / Vegan Feast

For the class in June, we'll be cooking recipes that are suitable for Vegetarian diets. If you would like to make a Vegan version of any recipe, we'll use a range of Vegan alternative ingredients. For the class in July, we will be cooking exclusively Vegan food.

With so many delicious fresh and local ingredients available it's easy to cook up a fantastic vegetarian feast to please all food lovers.   There's such a wide range of cuisines to draw on from around the world too - Spanish, Italian, Indian, French, Middle Eastern, Moroccan and British to name just a few. In this class we cook an inspirational menu, including savoury dishes and a sweet course too.

Includes welcome drink and homemade nibbles, all ingredients, recipe sheets to take home and lunch with wine.

Typical things you will make:

Aubergine parmigiana with fresh herb pasta and cavalo nero

Butternut squash and quinoa salad with cranberries, spinach and Welsh blue cheese

Courgette, carrot and chilli pancakes with spicy roast carrot hummus

Wild mushroom and madeira soup with thyme and lemon focaccia

Pears in wild bramble liqueur with blackberries, vanilla ice cream and soft amaretti

Choux pastries with Baileys mascarpone cream and warm chocolate sauce
